Olive Oil
OLIVE OIL CATEGORIES
According to the quality parameters as acidity, aroma, flavor, etc. the olive oil is classified in different categories. This categorization is defined also with Commission Regulation (EC) No 1019/2002 dated 13 June 2002 on marketing standards for olive oil. Extra Virgin olive Oil - Superior category olive oil extracted from fresh-picked olives and obtained solely by mechanical means. This kind of oil must not have undergone any treatments except washing, decanting, centrifugation and filtration. It comes from the first pressing of the olives, contains no more than 0.8% acidity, and is judged to have a superior taste. As lower is the acidity, as much better quality is the olive oil. There can be no refined oil in extra virgin olive oil. Virgin olive Oil – This kind of oil has the quality parameters of the Extra Virgin Olive Oil, but the general difference is in the highest acidity, which should be in the limits from 0,2% to 0,8%. Olive oil – known also as 100% pure Olive Oil - This kind of oil is a blend of refined olive oils and virgin olive oils, containing at most 1% acidity. It commonly lacks a strong flavor. Olive Pomace oil- This kind of oil is a blend of refined olive pomace oils and virgin olive oils, containing at most 1% acidity. Thanks to its high smoke point, it is suitable for the all cooking purposes including frying.
How to distinguish the high-quality olive oil?
Pay attention to the acidity certificate, which verifies the acidity of each batch. The lower the acidity value is the higher is the olive oil quality.Check for the EU Sign, which verifies the product’s origin and quality. Extra Virgin olive oil should be obtained by first cold pressing at –270C. Thus, the nutritious, organoleptic and healthful properties of the fruit are preserved to a greater extent. Make sure that the olive oil you are about to choose is Extra Virgin. It is a superior category olive oil extracted from hand-picked fresh olives and obtained solely by mechanical means. It does not contain any admixture. The main indicator determining the olive oil quality is its acidity. According to EU regulations the acidity of Extra Virgin olive oil should be in the frames of 0.2 - 0.8%.

Company Zeleni izbor d.o.o. awarded a certificate that grants the right for the product Elia Extra Virgin Olive Oil, produced by Axxon Bulgaria, to bare the stamp Healthy food – Green apple.
Stamp “healthy food – green apple” is awarded by the Serbian Chamber of Comerce and the Healthy Food – Green Apple Program.
Secretary of Agricoultoural, Food and Tobacco Association, Milan Prostran emphasized that the association is constantly side by side to its producers with a mission to assist them in enhancing the quality of the production and boosting productivity.
“Producers which at this point in time decide to compete with the quality of their food products are courageous, and this will, in long term, prove to be a very good endeavor.
Prostran has emphasized that what Chamber of commerce as an association of commerce would like to encourage is the investment in quality production and strengthening the productivity, which is presented by the products that acquire the stamp “healthy food – green apple”.
The quality of the products is determined based on the content of the raw material, fats, energy value and the amount of minerals like natrium, calcium, cilium, zinc and magnesium, saturated and unsaturated fats, natural fiber and protein.
